Chicken Taquitos

These chicken taquitos are so amazing, they are made for keto or low carb, but you can use any flour shell you like.

Ingredients:

1 cups shredded cooked chicken breast, large

1 cup salsa

1 – 10 ounce can rotel

2 cups cheddar cheese

3 tbsp sour cream

1 jar queso cheese dip

1 avocado, chopped

6 low carb taco shells

Directions:

Preheat oven to 350 degrees

Cook chicken breasts in a large soup pot, until cooked all the way through about 15 minutes.

Shredd chicken and place in a medium sized bowl.

Add salsa and 1- 1/2 cups cheddar cheese.

mix together well and place 1/6th of the chicken mixture into the middle of each shell. Roll tight and place into a baking dish.

Once all of the chicken taquitos are rolled, add the rest of the cheddar cheese and backe at 350 for 20-30 minutes or until shells are crisp.

Take out of the oven and let cool for 5 minutes.

Drain the rotel and add it to the queso dip, heat in the microwave for 2 minutes.

Pour over the top of the taquitos and add sour crean and chopped avocados.
